We have different types of taste buds on our to tongues. Whether we like some things is a combination of evolution and experience. For example we have evolved to really like sweet and fat things because they are a source of energy, and when humans weren’t sure to find food every day it was important to stock up on energetic food when they were available. Reversely bitterness can be associated with poisonous foods, so we have an automatic reaction of disgust, which is a message from our brain and body to avoid eating/drinking this.
We can also hate the taste of something because we have once been sick after eating it and we create an association between the two. But we can also force ourselves to drink/eat something again and again until we become use to it and actually like it. A lot of people do that with coffee for example, which is really bitter.
